What temperature should pork be cooked to?

The USDA recommends cooking whole cuts of pork to 145°F (63°C) with a 3-minute rest. Ground pork should reach 160°F (71°C). This is lower than the old standard of 160°F, resulting in juicier pork.

How long to cook pork per pound?

Cooking time varies by cut: pork loin takes about 20-25 minutes per pound at 350°F, pork tenderloin about 20 minutes per pound at 400°F, and pork shoulder needs 90 minutes per pound at 275°F for tender pulled pork.

Why is my pork dry?

Pork dries out when overcooked. Use a meat thermometer and remove pork at 140°F (it will rise to 145°F while resting). Brining before cooking adds moisture, and choosing cuts with more fat (like shoulder) helps too.

Can pork be pink inside?

Yes! Pork cooked to 145°F may have a slight pink color in the center, and this is perfectly safe. The pink color doesn't indicate undercooking - only temperature does.
